We added a fully operational pizza kitchen to a former event and overflow room. Our scope included everything from sourcing the equipment to meeting with City Health Inspectors. We installed new electrical to accommodate the additional refrigeration, oven, three-phase dough mixer, and future lighting. We placed and mapped the ovens location to allow for a straight shot direct vent through the roof without disturbing structural members, or penetrating rated assemblies. The floor was leveled, prepped, and tiled - due to the weight of the oven and the rigging equipment, we tiled everything after the oven was set. We chose a 12”x24” non-slip, installed in an offset pattern. Charcoal hexagons were installed under the oven. We anchored and framed the bar, as well as skinned the front and installed FRP behind all equipment. Our architect is a talented carpenter - he installed the cladding, live edge bar-top and sneeze guard. Last but not least we treated the brick with a breathable penetrating sealer. We had to remove walls, reroute plumbing, and essentially create a new kitchen while the restaurant was still operational. We worked very closely with city officials and Philly Health Inspectors, and came in on schedule and under budget.
